Fun in the Kitchen Edition: Home made tomato soup. I made up a batch of tomato soup for dinner tonight and it turned pretty well. I don't think I'll ever go back to condensed tomato soup again. To make a quick and easy tomato soup you will need:
  1. 3 tablespoons olive oil

  2. 3 garlic cloves, crushed

  3. 2 cans tomato sauce

  4. 1 can diced tomatoes

  5. 4 or 5 cups water

  6. 3 tablespoons honey

  7. 2 sprigs rosemary

  8. salt and pepper to taste

Toss the crushed garlic and olive oil into you favourite soup pot. Set the stove to medium heat. Stir occasionally until the garlic is soft. Add the tomato sauce, diced tomatoes, water, and honey to the pot and crank the heat up a bit to about medium high. If you don't mind picking rosemary stems out of your teeth strip the leaves from the stems and put stems and leaves into the pot. Otherwise tie the stems of rosemary together before adding them to the pot so you can fish them out later. Give everything a good stir then cover the pot and bring it to boil. Remove the pot from the stove once it reaches a boil. Serve up your soup with some hot gooey grilled cheese sandwiches. Enjoy!

    To me, if you take the time to make your own tomato soup, make your own sauce with ripe tomatoes.

    Plus, like most tomato based sauces, it's really better after it cools and settles.

    Just my opinion.

    Think of chili and lasagna.

  3. These days the time from ripe tomato on the vine to processed and in the can is just a few hours so canned really is a good deal. The only way you're going to do better is if you've got your own acreage to grow and can tomatoes. Besides, this is supposed to be a quick and easy meal. Growing and canning is a bit labour intensive.

    And yes, like fried chicken and so many other things, it does seem to taste better the next day.
